Mexican-born Hector Laguna is the executive chef at the Botanist. A professional chef since 2000, his first Canadian experience came in 2011 at Toronto's Lee Restaurant, under chef Susur Lee. “I believe that food influences us emotionally; it can comfort, calm, satisfy and bring joy, all in one meal,” Laguna says on Fairmont's website. “It’s about watching someone take their first bite, and know that I’ve made their day even a little bit better."Fairmont Hotels and Resorts/Supplied
